Short and sweet, this one.
We saw these corn toasties at A Good Appetite and promptly forwarded the recipe to CSC, our resident baker. And very promptly afterwards, she made them!

Between two kiddies and me, these corn toasties didn't even last a day! To be exact, they lasted a maximum of 2 hours.
I can't help myself and my cornmeal-love.
Great on its own, and it could be either eaten as a sweet snack or used in a savory dish. (We were thinking that we could pair it with some sort of Mexican-inspired braised pork dish, for example. Or chili, hehe.) Delicious and versatile.
I [heart] cornmeal.

After I wrote up this post, I went to the kitchen and discovered that CSC has made a new batch of this! Wow! She must be psychic.

ReplyDeleteYup - this is looking mighty good. You can spruce it up a bit - maybe parsley, garlic, and parm in the batter. Or even smoked cheese and then toast it - yup, the possibilities are definitely endless.

ReplyDeleteWe've been having this lately -- (Yes, CSC made them again... must be the constant "whining" from us. teehee.) -- with cervelat salami! Just plain old Freybe cervelat salami. SOOOOO good!
