When life gives you tex-mex taco beef...

...make nachos!




This was a good way to use up fillings and fixins' from taco night. Of course, the tex-mex taco beef shines in this!

(Since we don't really keep much cheese in the house, we actually had to buy some cheddar for our nachos!)

P.S. More real content posts soon! We do have quite a bit in store. But these long workdays are making it hard to do what's really important... like, you know, work on the blog!
